Custom NPC Models

Hey folks! I am just getting started with WotlK private server emulating, and am wondering if there are any good guides out there for adding custom models and custom NPCs? I understand you can edit an NPC in the database to have the name and faction ID you want, but I haven't been able to find a way to equip them for my preferred appearance. Thanks in advance, and I apologize if I am in the wrong place for this!
